Steps:
- Place brisket on 10x13 shallow pan, fat side up. Season with salt, pepper, garlic, and layer onions on top of roast.
- Bake in 350°F oven for 1 hour or until onions brown. Add 1 cup HOT water, cover with foil and seal tight. Reduce heat to 300°F and bake for 2 more hours.
- Remove brisket topped with onions to serving platter, you may take the onions off or leave them on. Slice thin.
- Thicken pan juices with cornstarch and COLD water. Pour small amount of gravy over top of brisket. Use remaining gravy to serve with potatoes.
