L'kebab (Algerian Fried Potato in Sauce) image

This is not the kebab you would think of. My husband makes this based on the recipe in "Great Book of Coucous". You could make your own french fries for a real treat but this tastes pretty good anyway.

2 tablespoons oil
1/2 cup onion, chopped
1 lb skinless chicken piece, rid of fat and skin
10 sprigs flat leaf parsley, leaves only, chopped
1/4 cup chickpeas, cooked
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon cinnamon
3 cups water
2 lbs frozen french fries
1 egg, beaten
lemon wedge, for serving

Steps:

  • Mix together in pan, 2 tablespoons oil, onion, chicken, 1/2 the parsley, chick peas, pepper, salt and cinnamon.
  • Fry this mixture over low heat, covered for 10 minutes.
  • Add water and bring to boil. Cook over medium heat for 40 minutes.
  • Meanwhile prepare the french fries according to package directions.
  • Add the cooked fries to the chicken mixture along with the egg and simmer for 10 minutes.
  • Garnish with remaining parsley.
