LIME AND PEANUT JASMINE RICE image

5 1/4 cups water
4 1/4 inch thick slices of lime plus wedges for garnish
4 1/4 inch thick slices peeled fresh ginger
1 tsp salt
3 cups jasmine rice, rinsed, drained
1/4 cup (1/2 stick) melted butter
1 tbsp (packed) finely grated lime peel
3 large green onions, chopped
1/2 cup chopped roasted salted peanuts

Steps:

  • Bring 5 1/4 cups water, lime, and ginger slices and salt to boil in large saucepan over med. high heat. Stir in rice, return to boil. Reduce heat to med. low, cover, and cook until rice is tender and water is absorbed, about 18min. Remove from heat. Mix in butter, lime peel, green onions, and peanuts. Transfer to bowl; garnish with lime wedges.
