Lightened creamy, cheesy potatoes image

An easy way to make delicious potatoes as a side dish, or as a breakfast. I got this recipe from a long-ago recipe booklet, but changed it up a bit to make it less fattening, but no less yummy.

Number Of Ingredients 6

1 - 2 lb bag frozen cubed hash brown potatoes
2 cup(s) light sour cream
2 cup(s) + 1/2 cup reduced fat, shredded sharp cheddar cheese
2 can(s) reduced-fat, cream of chicken soup
1 small bunch green onion, sliced
2 cup(s) crushed cornflakes for topping

Steps:

  • Heat oven to 350. Spray a lg baking dish w/ cooking spray. In lg bowl, combine sour cream, 2 cups cheese, soup and green onions.
  • Add hash browns and mix thoroughly. Pour mix into baking dish. In medium bowl, mix 1/2 cup cheese and crushed cornflakes, reserve.
  • Cover and bake potatoes for 35 mins. Uncover and top w/ cheese/cornflake mix. Bake, uncovered 15 mins, or until bubbly and top is browned.
