Lemon Coconut Loaf image

This lemony loaf is from Southern Living Magazine and is so luscious it's a dessert to die for! The bread's pound cake- like texture gets an unexpected twist from sweet chewy coconut. The photo is by Jennifer Danick. Recipe is tweaked a little by me.

Number Of Ingredients 14

1/2 c butter or margarine,softened
1 c granulated sugar
5 tsp lemon juice
2 large eggs
1 1/2 c all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 c milk
1/4 c flaked coconut
2 tsp lemon rind, grated
GLAZE:
1/2 c powdered sugar
2 Tbsp lemon juice
1 tsp corn syrup, light (i use karo brand)

Steps:

  • 1. Cream butter, sugar and lemon juice in a mixing bowl. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt; add to creamed mixture alternately with milk, stir in the coconut and lemon peel. Pour into a greased 8-inch loaf pan. Bake at 350^ for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack. Combine glazing ingredients; brush over loaf.
