LEMON CHEESECAKE BARS image

Yield makes 12 bars.

Number Of Ingredients 3

Crust: 1 1/2 sticks Margarine, 1 1/2 Cups Flour, 1/2 Cup confectioners sugar.
Filling:1 8 oz. pkg. cream cheese; softened, 2/3 Cup sugar, 2 lg. eggs, 2 teaspoons grated lemon Peel, 1/3 cup lemon juice.
Topping: 1 1/2 cup sour cream, 1/3 cup sugar, 1/2 teaspoon vanilla, Fresh Blueberries for garnish.

Steps:

  • Preheat oven to 350 degrees. Line a 13x9 pan with aluminum foil letting ends extend above pan 1-2 inches. Crust: with mixer, beat margarine, flour, & confectioners sugar until mixture holds together and forms a dough. Press evenly over bottom of prepared pan. Bake 15-20 minutes until golden & firm to touch. Filling: Beat cream cheese & sugar in lg. bowl until smooth. Add eggs, lemon peel, & lemon juice and continue beating until well blended. Pour over crust and spread evenly. Bake for 20 minutes until top is almost set. Topping: Mix sour cream, sugar, & vanilla. Carefully spread mixture over top of cheesecake. Bake 10 minutes longer. Remove pan to wire rack. Cool the refrigerate at least 4 hours before cutting into bars. Garnish with blueberries if desired.
