Lemon Bread image

I got the recipe for Pumpkin Bread from a co-worker and was amazed when she told me how easy it was to throw together. Going off of that recipe, I substituted white cake mix and lemon meringue pie filling to make this bread. All kinds of cake mixes and pie fillings can be used to vary the breads. YUM!

Number Of Ingredients 4

1 package(s) white cake mix
1 can(s) lemon meringue pie filling
1 large egg
1 1/2 teaspoon(s) poppy seeds (optional)

Steps:

  • Preheat the oven to 375 degrees.
  • Grease (if necessary) two 9" loaf pans with butter or vegetable shortening.
  • In a medium sized bowl, mix all ingredients until just blended. Mixture may be lumpy - this is good!
  • Divide the mixture between the two loaf pans, spreading to distribute it evenly and fill in the corners.
  • Bake at 375 degrees for about 45 minutes (pan types can vary the cook time). When a toothpick inserted in the center of the loaf comes out clean, the bread is done.
  • Cool pans on wire racks. Enjoy!
