Le Cellier Cheese & Beer Soup image

Number Of Ingredients 11

1/2 pound smoked bacon, finely diced
4 tablespoons butter
3 stalks celery, finely diced
1 red onion, finely diced
1 cup flour
3 cups chicken stock
4 cups whole milk
1 pound Canadian cheddar cheese (Black Maple), shredded
1/2 cup Canadian lager (Moosehead, Labatt's)
1 tablespoon Tabasco
1 tablespoon Worcestershire

Steps:

  • Render bacon until browned and crisp. Add butter and sauce celery and onion until softened.
  • Slowly add flour until combined into roux.
  • Slowly add stock until combined. Heat until thickened.
  • Add milk. Increase heat, if necessary, and thicken.
  • Add cheese by small handfuls. Season with salt and pepper. Add Tabasco, Worcestershire, and 1/4-1/2 c. beer to taste. Simmer on low until ready to serve.
