Steps:
- Render bacon until browned and crisp. Add butter and sauce celery and onion until softened.
- Slowly add flour until combined into roux.
- Slowly add stock until combined. Heat until thickened.
- Add milk. Increase heat, if necessary, and thicken.
- Add cheese by small handfuls. Season with salt and pepper. Add Tabasco, Worcestershire, and 1/4-1/2 c. beer to taste. Simmer on low until ready to serve.
