Steps:
- In a stand mixer, add to leftover mashed potatoes, eggs, salt and flour, 1 cup at a time, beating well after each addition. When beaten until moistened, trickle in the cold water until you have a workable dough. To a pot of "rolling boil" water, drop small Tablespoonfuls and let cook for 4-7 minutes - let them float to the top. Drain. Saute in butter, add salt & pepper, bacon and sauerkraut.
