Kentucky Jam Cake image

My grandmother made this cake every Christmas. I found the recipe.The cake is a must not only for Ky. and Tenn. folks, but for families whose roots stem from these states. Jam refers to Blackberry,dewberry, ect. My family always used Blackberry.

3/4 cup butter or margarine, softened
1 c sugar
3 eggs
3 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1 tsp allspice, ground
1/2 c buttermilk
1 c blackberry jam, seedless

Steps:

  • 1. Cream butter and sugar in a large mixing bowl, add eggs and beat again.
  • 2. Sift dry ingredents together 3 times; Add to cream mixture alternately with buttermilk.
  • 3. Fold in Jam. Pour into 2 greased 9-inch cakepan.
  • 4. Bake at 350 degrees about 35-45 minutes.Or untill golden brown.
  • 5. Cool in pans 10 minutes.
  • 6. Remove from pans and complete cooling on wire racks. Yiel one 9-inch cake.
  • 7. We use Carmeol Cream Icing, but you can use what you like.
