Steps:
- Let yeast stand in milk for 25 minutes. Combine with egg yolks and sugar. Cut butter into flour, as for pie; Add yeast mixture. Knead briefly until dough is the right texture, adding a bit of flour if sticky. Divide into 4. Roll out each dough ball into a circle, the thinner the better. Sprinkle with the filling of choice; cut into 6-8 pie shaped pieces and roll up starting with the wide end. Put on cookie sheet, seam down, ends slightly curved in. Cover with tea towel & let rise for 2 hours in warm place. Brush with egg white & bake @ 375 for 15-20 min.
