Instant Pot Sirloin Tip Shredded Beef Recipe image

Number Of Ingredients 12

3-5lb sirloin tip roast
2 to 4 tablespoons Montreal Steak Seasoning
2 to 4 tablespoons vegetable oil
3 cups yellow onion (diced)
1 cup red bell pepper (diced)
1 cup green bell pepper (diced)
1 tablespoon Carne Asada Seasoning
1 cup red wine
1/2 cup soy sauce
1 cup water
1 can Del Monte diced tomatoes and chiles (14 oz)
1/2 can chipotle peppers with sauce

Steps:

  • Cut the sirloin tip roast into large chunks that fit into the instant pot. Sprinkle with Montreal Steak Seasoning.
  • Set Instant Pot to saute. Add 2 Tbl of the oil and let it get hot. Brown the chunks of seasoned meat in chunks, removing to a plate when browned, adding more oil as needed.
  • Once all meat are browned and remove, add: 3 cups diced onions 1 cup diced red bell pepper 1 cup diced green bell pepper sprinkle of carne asada seasoning on vegetables Cook for 1-2 minutes, stirring the brown bits from the bottom (not all will come up that's ok)
  • Add 1 cup of red wine and deglaze the pan, and continue cooking while scraping up the brown bits.
  • Add: 1/2 cup soy sauce 1 cup water 1 14oz can del monte diced tomatoes and green chiles 1/2 can of chipotle peppers with sauce Stir well.
  • Add back meat and push down to try to cover as much of the meat as possible Set to high pressure 45 minutes Natural release...
  • Remove the beef from the liquid, remove the fat off the beef and shred using two forks. Add just enough liquid to the beef to keep it moist. Use the excess liquid as a base for soup or beans! (see notes)
