INA GARTEN;S CRANBERRY & APPLE CAKE image

12 oz. fresh cranberries
1 Granny Smith Apple, cored, peeled and diced
1/2 cup light brown sugar lightly packed
1 TBS grated orange zest (2 oranges)
1/4 fresh squeezed orange juice
1 1/8 tsp ground cinnamon
2 large eggs at room temperature
1 cup + 1 TBS granulated sugar
1/4 lb (1 stick) unsalted butter, melted and slightly cooled
1/4 cup sour cream
1 tsp vanilla extract
1 cup all purpose flour
1/4 tsp Kosher salt

Steps:

  • Preheat oven to 325 Combine 1st 6 ingredients (to cinnamon (reserving 1/8 tsp cinnamon) in bowl and set aside. Beat eggs on medium high in blender, 2 minutes. On medium, add 1 cup sugar, butter, sour cream and vanilla; beat until just combined. On low, slowly add flour and salt. Pour fruit mixture evenly in 10" glass pie plate. Pour batter over fruit, covering it completely. Combine remaining sugar and cinnamon and sprinkle over batter. Bake 55 - 60 minutes until toothpick comes out clean and fruit is bubbling around sides. Serve warm or at room temp. Vanilla ice cream.
