HONEY PEPPER PORK image

2-1/2 Pounds Pork Loin Roast
1/4 Cup Honey
2 TSbsp. Dijon Mussstard
2 Tbsp. Crushed Mixed Peppercorns
1/2 Tsp. Crushed Thyme
1/2 Tsp. Salt

Steps:

  • Carefully score roast 1/2 inch deep completely around roast, without cutting string. Combine all ingredients; mix well. Spoon or brush 2/3 of the honey mixture over pork to coat. Place meat on roasting rack in baking pan. Roast at 325 degrees F. one hour. Brush with remaining mixture and cook 30 minutes more or until thermometer registers 160 degrees F. Yield: 8 Servings
