Then I needed something to serve with the chicken and I decided to use the honey mustard sauce just like a BBQ sauce and toss with pasta. Steps:
- 1. Whisk together all the ingredients for the honey mustard sauce. Taste for honey, sometimes honey is not as strong as you think. Set sauce aside.
- 2. For chicken, slice onion into half rings and layer into bottom of a 9x13 baking dish.
- 3. Spoon some of the honey mustard sauce on top of onions, about a half cup.
- 4. Cover and bake in a 400 degree oven for about an hour.
- 5. About halfway through flip chicken over so meaty part of the breast is in the sauce for the end of the cooking time and stays moist.
- 6. After an hour or when chicken is cooked through, remove from baking dish and let cool.
- 7. For Sauce: melt butter and olive oil in a pan.
- 8. After butter, oil, and herbs are combined pour in sauce from the baking dish and let it reduce.
- 9. While sauce is reducing, pull chicken from the bone and shred, then add to sauce.
- 10. Cook spaghetti or linguine according to package.
- 11. Pour chicken and sauce over cooked pasta and toss.
