HOMEMADE SPINACH PASTA image

10 oz. spinach, steamed and chopped finely (or food processed), and squeezed dry
3 1/2 cups (14 oz.) flour
2 large eggs plus 1 egg yolk
olive oil as needed

Steps:

  • 1. In bowl of stand mixer, measure out flour. Add eggs and spinach. Using the dough hook begin to knead on low. If the mixture still seems shaggy after a few minutes add a splash of olive oil to moisten it. Continue to mix and add olive as necessary until the dough comes together into a slightly tacky, but not sticky ball. Continue to knead in mixer for 3 minutes after it comes together. 2. Shape the dough into a ball and wrap it tightly in plastic wrap. Leave it out on the counter to rest for at least 30 minutes. 3. Divide the dough into 4 and begin to shape into desired pasta.
