Homemade Marinara Sauce image

My family loves Italian and I am always looking for a marinara sauce that is fresh, flavorful and full of natural locally grown vegetables. Two years ago I began experimenting making my own and this is the recipe the family loves.

Yield 8 quarts, 32 serving(s)

Number Of Ingredients 12

3 medium onions, diced
8 fresh garlic cloves, finely minced (or more to taste)
1/3 cup fresh basil
1 sprig fresh thyme leaves or 1/2 teaspoon dried thyme
1 sprig fresh oregano or 1 teaspoon dried oregano
2 bay leaves (remove when done)
2 sprigs fresh parsley or 1 teaspoon dried parsley
1 teaspoon sea salt
1 carrot
1 zucchini (chopped)
1 eggplant (chopped)
5 lbs roma tomatoes

Steps:

  • Place all ingredients in a large crockpot.
  • cook overnight on low.
  • Remove sprigs of herbs
  • Next morningpuree all in a food processor.
  • Use fresh or store in the fridge up to 1 week, or can it according to your canner's instructions for tomato products.
  • I freeze this sauce in 1 qt freezer bags.
