Hoisin Chicken Pizza image

Use leftover or rotisserie chicken if you have it on hand. During the summer months, it's worth taking the time to grill fresh chicken to add a smokier flavor to the pizza. -Jessie Apfel, Berkeley, California

3/4 cup hoisin sauce, divided
1 tablespoon rice vinegar
1 tablespoon sesame oil
1-1/2 teaspoons minced fresh gingerroot
1 garlic cloves, minced
2 packages (6 ounces each) ready-to-use grilled chicken breast strips
16 large fresh mushrooms, thinly sliced
2 prebaked 12-inch pizza crusts
4 green onions, chopped
1 can (8 ounces) sliced water chestnuts, drained
4 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. In a small bowl, combine 1/2 cup hoisin, vinegar, oil, gingerroot and garlic. In a large bowl, combine chicken, mushrooms and remaining hoisin; toss to coat., Place crusts on 2 ungreased 12-in. pizza pans. Spread hoisin mixture over crusts. Top with chicken mixture, onions, water chestnuts and cheese., Bake until heated through and cheese is melted, 10-15 minutes.
