HEALTHIER OATMEAL COOKIES image

Yield 24 cookies

Number Of Ingredients 10

1 c old fashioned rolled oats
3/4 c flour (half wheat0
1/4 t cinnamon
1/4 t baking soda
1/4 t salt
4 T unsalted butter, melted & cooled
1 large egg
1 T vanilla extract
1 c packed dk brown sugar
1/2 c raisins or choc chips

Steps:

  • Place rack in middle of oven & preheat to 350F. Line sheets with parchment. Wisk oats, flour, cinnamon, soda, salt in medium bowl. In lg bowl mix butter, egg & vanilla. Stir in brown sugar until smooth. Stir in oat mixture. Roll into 1 inch balls, and spaace 2 1/2 inches apart. Bake one sheet at a time 11-13 min.
