HAWAIIAN SPREAD image

This spread goes with my Hawaiian Muffins, or bagels, toast, or quick breads. Works well, as breakfast, dessert, or snack. Also, from my little muffin cookbook. Chilling time, not included in prep time.

Number Of Ingredients 7

- chilling time, not included in prep time
1/2 cup(s) salted, roasted macadamia nuts
1/2 cup(s) chopped, peeled mango or papaya
4 ounce(s) cream cheese or reduced-fat cream cheese, softened
3 tablespoon(s) pineapple preserves
2 tablespoon(s) lightly salted butter, softened
1/4 teaspoon(s) vanilla extract

Steps:

  • Place nuts in container of food processor fitted with steel blade; process 30 seconds, or until ground. Add mango; process 30 seconds, or until pureed. Add cream cheese, preserves, butter, and vanilla extract; process 30 seconds, or until smooth, stopping to scrape down sides of container with rubber scraper, if necessary.
  • Remove spread to a small bowl. Cover, and refrigerate 1 hour, or until chilled and slightly firm. Makes approximately 1 1/3 cups.
