GRILLED TUNA WITH GARLIC DILL SAUCE image

4-6 center cut, 1-inch thick tuna steaks
Juice,herbs,& spices from a jar of Ba-Tampe garlic dill pickles
Juice of 1 fresh lemon
1/4 Cup extra virgin olive oil
freshly ground black pepper
1 Tbs. lemon zest
2 Cups dry white wine
1 tsp. granulated garlic
4 Tbs. butter
1 Tbs. minced flat-leaf parsley

Steps:

  • 1.Marinate tuna steaks in pickle juice with its herbs and spices plus the lemon juice for 2 hours, turning once. Reserve marinade after removing steaks. 2.Brush tuna on both sides with olive oil and sprinkle with black pepper. 3.Cook on hot grill, over medium heat. Do not move until carmelized grill marks appear on bottom. Reposition tuna steaks to form crisscrossed grill marks. Turn fish over and repeat process.Remove from grill while steaks are still rare in the center. 4.Strain marinade, reserving 1 cup of liquid. Pour contents of strainer,reserved marinade,and white wine into a medium saucepan.Bring to a boil. Lower heat and simmer until reduced by half. 5. Add granulated garlic and lemon zest. Simmer 2 minutes more. Remove from heat and whisk in butter, 1 tablespoon at a time. 6.After plating fish, spoon sauce over steaks and serve over hot sushi rice and grilled asparagus.
