GRILLED SHRIMP AND EGGPLANT WITH ASIAN FISH SAUCE AND MINT image

Number Of Ingredients 7

2 1/2 lbs eggplant cleaned and cut into 1" cubes
1/2 c olive oil
3/4 tsp salt
1 lb large shrimp shelled
1 large garlic clove
2 tsp chopped fresh mint plus sprigs for garnish
1 Tbsp fish sauce

Steps:

  • Preheat oven to 425 Degrees Toss eggplant with 6 Tbsps oil and 1/2 tsp salt Roast eggplant in oven (or on grill)- until soft and brown (10 - 20 mins) Toss shrimp with 2 Tbsp oil a d 1/4 tsp salt and add to eggplant (or grill) Bake for another 10-12 minutes until shrimp is opaque Pound or mince garlic and a pinch of salt to make paste. Toss shrimp, eggplant, paste, and fish sauce. Serve with mint sprigs for garnish
