Green Herb Soup image

A nice chilled soup from The Popular Potato. Use a mixture of herbs such as basil, parsley, mint, thyme, rosemary, sage, sorel. For a professional touch serve chilled soup with ice cubes set with a sprig of fresh parsley or other fresh herb from your garden.

Number Of Ingredients 9

1 1/2 tablespoons butter
6 green onions, whites and greens sliced
1 large potato, peeled and diced
4 outer lettuce leaves, washed and torn into small pieces
2 cups water
1/2 lemon, juice of
pepper, to taste
3 tablespoons chopped fresh herbs
1/2 cup cream

Steps:

  • Melt butter, add green onions, and fry over a low heat until tender. Add diced potato and stir for 1 minute. Add lettuce. Cover with water and bring to a boil. Simmer for 20 minutes. Stir in lemon juice and pepper. Using a blender blend until smooth OR push soup through a sieve if no blender is available. Add herbs and cream. Chill.
