GREEN BEANS WITH GOAT CHEESE AND ROASTED PEPPERS image

Number Of Ingredients 5

3 cups whole green beans, fresh or frozen
1 red bell pepper, seeded
3 T. Goat Cheese
3 T pine nuts
1 T. Olive oil

Steps:

  • Wash and cut the ends off the green beans. Set aside. Wash and seed the red bell pepper. Cut into 1" wide strips. Place on grilling grid, skin side up, under low broiler. Broil until skins begin to blacken unevenly. Remove from heat. Set aside. Heat olive oil in a small sauté pan. Toast pine nuts until golden brown, over low heat. Cool on paper towel. Set aside. Steam the green beans until cooked but still bright green. Drain off all water, and return beans to the hot pan. Add the goat cheese and toss until cheese melts and coats green beans. Cut pepper strips into bite-sized pieces, and toss with green beans. Add Pine nuts, toss lightly. Serve hot.
