GREEN BEAN WITH BACON AND TOASTED ALMONDS image

Ingredients:
4 cups of green beans (trimmed and blanched)
2 tbsps of butter
½ cup of bacon or pancetta, cut into small dices
¾ cup of sliced toasted almonds
2 tbsp balsamic vinegar
salt and pepper to taste

Steps:

  • Method: 1. In a large frying pan over medium high heat, fry the bacon or pancetta till it starts to turn a light golden brown, stirring continuously and allowing it to render its own fat. 2. Add one tablespoon of butter, allow it to brown lightly, toss in with toasted almonds, balsamic vinegar and stir vigorously. 3. In a separate pot of boiling salted water, cook your green beans till tender. 4. Drain and add to the bacon and almond mixture. 5. Toss gently, place into serving dish and serve.
