Great Pumpkin Cookies image

Don't skip the step of toasting the walnuts - it adds a subtle little note of flavor and improves the texture of the nuts in the finished cookies.

3 cup(s) flour
2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
2 stick(s) butter
1 cup(s) brown sugar, firmly packed
1 cup(s) sugar
2 - eggs
1 teaspoon(s) vanilla
1 cup(s) pumpkin puree
1 cup(s) chocolate chips
1 cup(s) white chocolate chips
3/4 cup(s) walnut pieces, toasted

Steps:

  • Preheat oven to 350°. Line cookie sheets with parchment paper or silpat. Sift together dry ingredients and spices. Set aside.
  • Using a stand mixer, cream together butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Add pumpkin; beat until smooth.
  • Sift in dry ingredients a cup at a time, blending on low speed until thoroughly incorporated. Mix in chips and nuts.
  • Scoop dough by tablespoons onto prepared cookies sheets. Bake 12-15 minutes or until edges are golden brown.
