Great Northern Bean Chili image

This came from a clipping, that I finally realized, was from Taste of Home. Very simple recipe. I used a little less cumin in it, as personal preference. This is meant to be a slow cooker recipe, but it could be done on the stove top, as well.

Number Of Ingredients 8

2 pound(s) boneless, skinless chicken breasts, cut into 1 inch cubes
1 tablespoon(s) canola or vegetable oil
1 jar(s) (48 oz) great northern beans, rinsed and drained
1 teaspoon(s) minced garlic, from a jar
1 jar(s) (16 oz) salsa
1 can(s) (14 1/2 oz) chicken broth
1 teaspoon(s) ground cumin, optional
2 cup(s) (8 oz) shredded monterey jack cheese, regular or 2%

Steps:

  • In a large skillet, brown chicken in oil; drain.
  • In a 4 or 5 quart slow cooker, combine all items, except cheese. Cover, and cook, on LOW for 4-6 hours, or until chicken is tender. Test for saltiness; adjust. Serve with cheese. Makes 8 servings.
