Granny Cake image

My Mom's been gone for some time now and this is one of the recipes she gave me after I tried it and loved it. Funny how little things like recipes bring back memories and times spent together...enjoy!

Number Of Ingredients 11

1 1/2 c sugar
2 c all-purpose flour
1 tsp baking soda
1 tsp salt
2 eggs
2 c crushed pineapple (one 15 oz can, do not drain)
1/3 c brown sugar, firmly packed
1/2 c walnuts (chopped or cut up halves)
1 c canned milk (evaporated)
1 stick margarine
1 tsp vanilla

Steps:

  • 1. Mix together first 4 ingredients (sugar, flour, soda & salt.)
  • 2. Then add in eggs and crushed pineapple. Mix with spoon until all moistened.
  • 3. Pour into a 9x13" greased pan.
  • 4. Sprinkle 1/3 cup brown sugar and the walnuts over the cake mixture.
  • 5. Bake at 350 degrees for 40-45 minutes. ( no need to cover)
  • 6. Boil 1 cup canned milk with 1 stick of margarine and 1 teaspoon vanilla. (just to boil and take off heat)
  • 7. Pour the milk mixture over the warm cake.
  • 8. Cut into squares and serve with ice cream and/or whipped cream. Keep pan covered so it doesn't dry out.
