Grandma's Banana Bread image

Old Fashioned Bread.

Number Of Ingredients 13

1 large egg, room temperature
2 egg whites
1 tsp pure vanilla extract, or almond extract
6 Tbsp butter, room temperature
1/2 c light brown sugar (firmly packed)
1/2 c granulated sugar
1 1/2 c very ripe bananas mashed (about 3-4 bananas)
1 3/4 c all purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/2 c heavy cream
1/3 c walnuts chopped
1/2 tsp salt (optional)

Steps:

  • 1. Preheat oven to 350 F. Spray only the bottom of a 9x5 loaf pan with nonstick spray. In large bowl add flour baking soda, baking powder and salt if your adding that.
  • 2. In a mixer (I use a Kitchen Aid) Beat butter at medium speed until light and fluffy. Add granulated sugar and then the brown sugar until well mixed. Add vanilla to egg and add to mixer then 2 egg whites one at a time. Beat until well blended. Add mashed bananas and beat on high speed for about 1 minute.
  • 3. Add some of your flour mix to the butter mixture and some cream, flour, rotating and ultimately ending with the flour. Add the walnuts to the batter and fold in well. Pour the batter into the loaf pan. Making sure its even
  • 4. Bake in preheated oven for about 1 hour and 15 mins or until toothpick inserted into the center comes out clean and the bread is nicely browned. Cool on wire rack about 15 minutes. Remove bread from pan slice and serve with butter and jam.
