Grandma Boone's Corn Casserole image

My Grandma used to make this Corn Casserole (she called it Spoonbread) on Sundays after church and serve with her Fried Chicken and green beans with potato's,she did the green beans and potato's in the deep-well that was in her wonderful big electric stove,anyone remember those??? One of my best memories!

Number Of Ingredients 12

1 stick margarine - melted
1 can(s) whole kernal corn (drained)
1 can(s) creamed corn
1 large egg - beaten
1 c sour cream
1 pkg corn bread mix ( i use jiffy)
IF YOU DON'T HAVE CORNBREAD MIX, MAKE YOUR OWN
1/2 c yellow cornmeal
1/2 c all purpose flour
3 tsp baking powder
2 Tbsp sugar or splenda
1/2 tsp salt

Steps:

  • 1. melt margarine first ... then mix together both corns, egg and sour cream, mix well ... then add cornbread mix - mix lightly,add margarine ... BLEND well,but don't over mix.
  • 2. pour into lightly greased 2 Qt. casserole. Bake @ 350 until set ... about 50 -60 mins.
