I remember my mother making this sweet quick bread when I was growing up in Pennsylvania Dutch country. It's a great way to use some of the extra zucchini from the garden. It freezes well and can be frozen to give as gifts for thanksgiving or Christmas which is what we did for many years...... what a great gift! A taste of the...

2 c sugar
1 c vegetable oil
3 large eggs
2 tsp vanilla extract
2 c grated zucchini (unpeeled)
3 c all purpose flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
3 tsp cinnamon

Steps:

  • 1. Heat oven to 350 degrees F. Grease and flour 2 loaf pans or tube pan. Set aside.
  • 2. In a large bowl, combine the sugar, oil, eggs, vanilla and zucchini. In a separate bowl, combine the flour, salt, baking soda, baking powder and cinnamon. Add dry ingredients to wet and mix well.
  • 3. Pour batter into prepared loaf pans and bake for 50-60 minutes or until toothpick inserted near middle comes out clean (but it may look a little wet....).
  • 4. Cool in pan for 10 minutes then transfer to a wire rack to cool completely.
