Pumpernickle goes well with strong flavors (I think), so the "stinky cheeses" like gorgonzola and goat, taste great against the dark flavor of pumpernickle. I used roasted red pepper hummus for this one and it tasted great...

Steps:
- Top 3 of the bread slices with the crumbled cheeses. Toast ALL slices in convection oven until bread is crispy and cheese is soft and warm.
- Roll basil up and cut into bits that will unroll into mini strips (basil chiffonade).
- Assemble: on top of cheesy slices, layer the basil, then the ham, tomato, cucumber, pinch of salt, red onion, chives and dill.
- Spread hummus on empty slices and top your lovely mini sandwiches. Enjoy.
