GLAZED SAGE & APPLE TURKEY LOAF image

Number Of Ingredients 13

1 large onion, finely chopped
Vegetable cooking spray
2-1/2 lbs lean ground turkey (fresh)
2 cups bread crumbs
2 large unpeeled Golden Delisious apples cored & chopped
3 egg whites or 2 eggs
2 tbl fresh chopped parsley
2 tbl fresh sage
1/2 tsp pepper1 tsp salt
1/4 c ketchup
2 tsp prepared mustard/less if Dijon
3/4 cup apples jelly
pinch ground allspice

Steps:

  • Preheat oven to 350. Spray a large non-stick skillet with vegetable spray. Heat skillet & sauté onion over medium heat until softened & lightly browned. Set aside. Lightly beat eggs whites in a large mixing bowl. Add the ground turkey, breadcrumbs, apples, parsley, salt, pepper, sage, ketchup, & mustard & mix well. Add the sautéed onions, & mix to combine all ingredients. Spray, the bottom & sides of a 10x14 baking pan. Form turkey mixture into a loak & place in the prepared pan. Melt the jelly with the allspice in the small saucepan. Brush the top & sides of the loaf with 1/3 of this melted jelly. Place loaf in oven for ½ hour. Remove from oven & brush again with half of the remaining jelly. Return to oven for another ½ hour. Remove from oven & brush again with the remaining melted jelly. Allow loaf to sit for 8-10 minutes before slicing into serving portions.
