Instead of broiling the garlic, you can also char cloves one at a time over the flame of a gas stove, holding and turning with tongs, until blackened and blistering, about 30 seconds to 1 minute each. The beans make a delectable side for Shrimp and Clams a la Plancha.

Yield Serves 8 to 10

Number Of Ingredients 5

1 pound dried cannellini beans
4 cloves garlic, unpeeled
1/2 cup extra-virgin olive oil
5 sprigs thyme
Kosher salt and freshly ground pepper

  • Place beans in a large bowl; cover with water by several inches. Refrigerate, covered, overnight.

Place garlic cloves on a rimmed baking sheet and place under broiler, turning to charall over, 2 to 3 minutes. Add garlic, oil, and thyme to pot; season generously with salt and pepper.
