Garbanzo Stew image

one pot meal...simple & tasty

Number Of Ingredients 15

2 can(s) garbanzo beans/drained
1 - spanish chorizo/sliced thin
1/2 pound(s) ham/cut into cubes
1/2 cup(s) onion
1/2 - bell pepper
1/2 jar(s) red pimentos
3 - garlic cloves/smashed
1 large can fire roasted tomatoes
1 cup(s) dry cooking wine
- salt/pepper
pinch(es) red pepper flakes ( optional)
1 tablespoon(s) olive oil
1/2 cup(s) green olives
1 sprig(s) cilantro
1 sprig(s) parsley

Steps:

  • slice the chorizo and cube the ham ( cooking ham, not sweet)chop the onions, peppers and garlic.
  • In a large skillet with olive oil saute everything together...drain the garbanzo beans ( soaked in water and salt) and rinse well.
  • add to the skillet and combine...add the can of tomatoes and wine.
  • add salt and pepper to taste, add in the olives, cilantro and parsely...simmer on low for at least 30 mins, serve with rice.
