FRIED FALAFEL (NOT DEEP-FRIED) image

1 can chickpeas, drained and rinsed
1/4 cup panko bread crumbs
1 egg
2 tablespoons all-purpose flour
1 scallion
1/2 bunch cilantro
1 tablespoon oil
1 garlic clove
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground cumin
1/8 teaspoon ground cinnamon

Steps:

  • Place ingredients in a blender. Stop to scrape sides. It may take a few times. Continue until a coarse mixture forms, add more bread crumbs if needed (the mixture will be moist). Form into 4 patties. Heat oil in a nonstick skillet over medium-high heat. Add patties and cook until golden and beginning to crisp, 4-5 minutes. Carefully flip and cook until golden brown, 2-4 minutes more.
