Steps:
- Crack the eggs into a cold pan. Add 1/2 of the butter and put it on low heat. Whisk the eggs until they start to set then add the remaining butter.
- Keep whisking but don't let the pan get to hot. You want the eggs to be soft and lumpy. When almost done add the creme fraiche and season salt.
- Remove from heat while they are still lumpy and soft. Place on plate and season with pepper.
