Fluffy Scrambled Eggs image

This is all about the technique. Whisking and cooking low gives you the softest cloud like eggs. So fluffy you'll never want to go back to hard scrambled eggs again

Number Of Ingredients 4

3 large eggs
1 tablespoon(s) cold butter cut in half
1/2 tablespoon(s) creme fraiche
salt and pepper

Steps:

  • Crack the eggs into a cold pan. Add 1/2 of the butter and put it on low heat. Whisk the eggs until they start to set then add the remaining butter.
  • Keep whisking but don't let the pan get to hot. You want the eggs to be soft and lumpy. When almost done add the creme fraiche and season salt.
  • Remove from heat while they are still lumpy and soft. Place on plate and season with pepper.
