This is our favorite pancake mix. They are great for weekend breakfasts.

Steps:
- Combine milk with vinegar and set aside for 5 minutes to sour.
- In a large bowl; combine the flour, sugar, baking powder, baking soda and salt.
- Whisk the egg, oil and flavorings into the soured milk. Combine the liquids with the dry ingredients. Whisk until thouroughly mixed.
- Heat a large skillet or griddle over medium heat. When hot, coat with cooking spray. Ladle the batter onto the skillet (about 1/4 cup fulls) and cook until bubbles appear. Flip pancakes over with a spatula until browned on the other side. Serve immediatelu.
