Fish Chowder image

We love this rich chowder, it is so good with a big chunck of hot bread or corn bread. Really great on a cold night by the fire. This can be doubled or tripled easily for a bigger crowd.

Number Of Ingredients 8

1 lb fresh or frozen fish fillets (be sure to debone)
2-3 c cubed, peeled potatoes approximately 1" pieces
2 tsp salt
1/8 tsp pepper
3 slice bacon
1/2 c chopped onion
2 c milk
3 Tbsp flour

Steps:

  • 1. Cut fish into 2 inch pieces
  • 2. Cook potatoes in 2 cups boiling water for 5 minutes
  • 3. add fish, salt and pepper. Simmer covered for 10-12 minutes
  • 4. Cook bacon till crisp. Drain and crumble; reserve drippings.
  • 5. cook onion in drippings
  • 6. Add crumbled bacon and onion to fish mixture.
  • 7. Slowly blend flour into milk; add to chowder. Cook stirring constantly till mixture thickens. Garnish with a sprinkle of fresh chopped parsley or some thinly sliced green onion tops
