Firecracker Casserole Recipe - (4.3/5) image

Number Of Ingredients 10

2 lbs. ground beef
1 med onion, chopped
1 can (15oz) black beans, rinsed and drained
1 to 2 T chili powder
2-3 tsp ground cumin
1/2 tsp salt
4 flour tortillas (7 in.)
1 can (10 3/4 oz) cream of mushroom soup, undiluted
1 can (10 oz) diced tomatoes and green chilies, untrained
1 cup shredded cheddar cheese

Steps:

  • In a skillet, cook the beef and onion until the meat is no longer pink; drain. Add beans, chili powder, cumin and salt. Transfer to a greased 13x9 baking dish. Arrange tortillas over the top. Combine soup and tomatoes; pour over the tortillas. Sprinkle with cheese and bake uncovered at 350° for 25-30 min, or until heated through.
