When fennel is nice I like to make up this casserole for a change. I don't really have a recipe for it because it is something I just put together.

Steps:
- 1. Cut off top of fennel bulbs and slice bulb in half. Cook in a little chicken stock until just tender.
- 2. Cut fennel into slices or chunks and put in a casserole dish. Sprinkle onion and garlic on top and drizzle with a little melted butter. Add salt and pepper to taste.
- 3. Add grated cheese on top---your choice. I have used Manchego(which is very good), Parmesan, Swiss. You can also add a little cream if you want. Make the recipe your own!
- 4. Bake in 375 oven until cheese is melted and browned a little.
