Farro 'Risotto' with Bacon and Kale image

3 cups water
1 cup farro, uncooked
4 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 onion, chopped
2 cloves garlic, minced
2 cups tightly packed stemmed fresh kale, cut into strips
1/4 cup KRAFT Grated Parmesan Cheese
zest and juice from 1/2 lemon

Steps:

  • Bring water and farro to boil in saucepan; simmer on medium-low heat 30 min. or until farro is tender and water is absorbed, stirring occasionally.
  • Meanwhile, cook and stir bacon in large nonstick pan on medium until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add onions and garlic to reserved drippings; cook 4 min. or until crisp-tender, stirring frequently. Add kale; stir. Cook 5 min. or until tender, stirring frequently. Remove from heat.
  • Add farro to kale mixture in skillet along with the cheese, lemon zest, lemon juice and bacon; mix lightly.
