Farmer's Breakfast image

Number Of Ingredients 8

4 potatoes
4 slice bacon, chopped
3 large eggs
3 Tbsp milk
1/2 tsp salt
1 c cooked ham, chopped
2 tomatoes
1 Tbsp chive snips

Steps:

  • 1. Boil unpeeled potatoes 30 minutes.
  • 2. Rinse under cold water, peel and set aside to cool.
  • 3. Slice potatoes.
  • 4. In a large frypan cook bacon until transperent.
  • 5. Add the potato slices; cook until lightly borwned.
  • 6. Meanwhile blend eggs with milk and salt.
  • 7. Stir in the cubed ham.
  • 8. Cut the tomatoes into thin wedges; add to the egg mixture.
  • 9. Pour the egg mixture over the potatoes in the frypan.
  • 10. Cook until the eggs are set.
  • 11. Sprinkle with chopped chives and serve at once.
