1 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup milk
2 eggs, beaten
1/4 cup vegetable oil
2 cups cooked rice
1 can corn
1/2 cup onion, finely chopped
2 tablespoons jalapeno, finely chopped
1/2 pound cheddar cheese, grated

Steps:

  • Sift dry ingredients together into a large bowl. Add remaining ingredients, stirring only to blend well. Pour into a 12-inch ovenproof skillet which has been greased and sprinkled with cornmeal. Bake at 350 degrees for 40-45 minutes.
