Easy Microwave TanTan Ramen image

This dish is inspired by the Chinese noodle dish "dandanmian" which is known as "tantanmen" in Japanese. Many ramen shops in Japan serve tantan ramen and it's one of the spicy options for a ramen.

4 ounces ground beef
1 clove garlic, finely grated
1 teaspoon grated fresh ginger
1 teaspoon green onion, light parts only, minced
1 ½ tablespoons miso paste
1 tablespoon toasted sesame seeds, ground
1 tablespoon sake
1 tablespoon soy sauce
2 teaspoons white sugar
1 teaspoon cornstarch
1 teaspoon doubanjiang (spicy broad bean paste)
1 teaspoon sesame oil
1 large tomato, sliced
½ ear fresh corn, cooked
2 (3 ounce) packages ramen noodles

Steps:

  • Combine ground beef, garlic, ginger, and green onion in a microwave-safe bowl.
  • Mix together miso, sesame seeds, sake, soy sauce, sugar, cornstarch, doubanjiang, and sesame oil in a bowl; pour over the ground beef mixture.
  • Cover and microwave for 2 minutes. Remove and mix. Add tomato slices and corn. Cover and microwave until cooked through, about 3 minutes.
  • While the beef mixture is cooking, bring a pot of water to a boil. Add ramen and cook until soft, about 3 minutes. Drain.
  • Add drained ramen to the cooked beef mixture and serve.
