EASY INDIAN CHICKEN STIR-FRY image

4 T. peanut oil
4 clove garlic crushed
8 scallions diced
4 med. zucchini thinly sliced
32 oz mushrooms sliced
2 10 oz cans diced tomatoes with juice
8 cps. cooked chicken diced
8 T. soy sauce
1/2 tsp. cumin
1/2 tsp. gingerroot minced
1/4 tsp. ground coriander
1/4 tsp. cayenne pepper
1/2 tsp. tumeric
1 tsp. black pepper

Steps:

  • Heat oil in a wok over medium heat. Add the garlic and onions. Cook for 3 minutes stirring constantly. Add the zucchini for 7 minutes. Add the mushrooms, tomato until zucchini is almost tender. Add chicken and heat through still stirring. Add soy sauce and spices. Mix well and serve.
