Easy Delicious Pineapple Sheet Cake image

Easy, easy, easy and yet oh so good! This is a great cake to take to a summer potluck. It's a great keeper and might even be better the next day.

Number Of Ingredients 17

FOR THE CAKE:
2 cups Flour
2 cups Sugar
2 whole Eggs
½ teaspoons Salt
1-¼ teaspoon Baking Soda
1 can 20 Ounce Crushed Pineapple With Juice, Reserve 1/4 Cup For Frosting

FOR THE FROSTING:
5 cups Powdered Sugar
8 ounces, weight Package Cream Cheese, Room Temperature
½ cups Shredded Coconut
½ cups Finely Chopped Toasted Pecans
¼ cups Butter, Room Temperature
¼ cups Crushed Pineapple (with Juice)
1 teaspoon Vanilla
1 dash Salt

Steps:

  • Preheat oven to 350 degrees F.
  • Mix all of the cake ingredients together. Pour into a greased 12 x 17 inch sheet cake pan. Bake at 350 degrees F for 20 - 25 minutes (until a finger pressed in the center of the cake does not leave a depression). Cool completely before frosting.
  • For the Frosting:
  • Mix together all of the frosting ingredients until well blended. If frosting is too thick, a small amount of milk may be added to make it a spreadable consistency. Spread over the top of the cooled sheet cake.
