Dulce de Leche Rice Pudding image

Dulce de Leche is a thick caramel made from condensed milk that is enormously popular in Latin and South America. It is commonly available in cans now so you don't have to make it yourself. It adds rich caramel flavor to this simple rice pudding.

1 c long grain white rice
1/2 c evaporated milk
3/4 c water
2 4-inch cinnamon sticks
1 pinch salt
1-3/4 c milk or almond milk
1/4 c golden raisins
1 c nestle la lechera canned dulce de leche
1/2 tsp vanilla extract

Steps:

  • 1. Place rice, water, evaporated milk, cinnamon sticks and a pinch of salt in a small/compact rice cooker and cook using the regular setting.
  • 2. When rice cooker is finished, scoop the rice into a small saucepan, along with the raisins, dulce de leche, and milk or almond milk, stirring to mix.
  • 3. Bring mixture to a bubble and simmer gently over low heat, stirring frequently, for about 25 minutes or until thickened and rice is tender. You can add a tablespoon or two of water or milk if the heat is too high and it starts getting too thick.
  • 4. Remove from heat, fish out the cinnamon sticks and stir in the vanilla. Cool to room temperature then refrigerate until serving time. This thickens up even more as it keeps so adjust the thickness with milk or water just before serving- the rice does this.
