Do Ahead Chicken Casserole image

This from my sister in law Jezzebelle AKA Jessine she was from a large family and they did many stretch your dollar meals when growing up in the early 50's.

Number Of Ingredients 12

8 slice bread, cubed
2 c cooked chicken, diced
1/2 c onion, chopped
2 Tbsp fresh parsley, snipped
1 small mushrooms, canned
1/2 c mayonnaise
3 medium eggs
2 c milk
1/2 tsp salt
dash(es) pepper
1 can(s) cream of chicken soup
1 c mozzarella cheese, shredded

Steps:

  • 1. Cut bread in 1 inch cubes, place, half of them in bottom of buttered 9 x 13 inch baking dish, combine chicken, onion, parsley, mushrooms, mayonnaise and seasonings spoon over bread, top with remaining bread cubes. Beat eggs slightly and blend in milk, pour over and cover casserole, refrigerate over night. Just before baking top with undiluted soup.
  • 2. Bake at 325 about 1 hour until set, sprinkle with cheese and Finish baking until cheese is melted, let stand about 10 minutes then serve
