Dads slow-cooked, tender pot roast image

My dad would make this on special Sundays. It was always so tender...yum!

Number Of Ingredients 10

1 - onion, cut into thick slices
2 large carrots, peeled and cut into 1"-pieces
12 ounce(s) mushrooms, quartered
4 teaspoon(s) minced garlic
1 - 14-1/2 oz can diced tomatoes, drained
1 cup(s) ketchup
2 tablespoon(s) dijon mustard
2 tablespoon(s) worcestershire sauce
3 pound(s) chuck roast, trimmed of fat
1/4 teaspoon(s) each salt and pepper

Steps:

  • In slow-cooker, combine onion, carrots, mushrooms, garlic and tomatoes. In bowl, whisk together ketchup, mustard and worcestershire sauce.
  • Pour 1/2 the sauce over veggies. Sprinkle roast w/ salt and pepper. Place roast over veggies. Spread remaining sauce over roast. Cover, cook for 8 hrs.
